The newspaper inwards 纸包鸡 serves a role (other than containing the chicken).
It gives the chicken the best of ii worlds: steaming too deep-frying.
Because the gist juices convey nowhere to escape, the chicken is extremely juicy, much juicier than paperless deep-fried chicken could e'er be.
At the same time, there's the fragrance of browned chicken though it's non crisp.
In fact, the smell isn't only on the exterior of the chicken. The wonderful season is within the gist every bit good because the newspaper acted similar a shield, preventing it from going anywhere else.

PAPER-WRAPPED CHICKEN (纸包鸡, CHEE PoW KAI)
four minor natural springtime chicken legs weighing 600 g, debone to yield 500 g meat
Marinade
xv g ginger
xv g shallots
xx g garlic
½ tbsp sugar
¾ tsp salt
½ tsp soil white pepper
½ tbsp low-cal soya sauce
1 tsp nighttime soya sauce
1 tbsp oyster sauce
1 tbsp Worcestershire sauce
1 tbsp Shaoxing wine
1 tsp Cognac
1 tbsp white sesame oil
1 tbsp vegetable oil
1 tbsp tapioca flour
sixteen pieces parchment paper, cutting 25 x xv cm
crude for deep-frying
🌹 I've tried Sakura chicken vs regular natural springtime chicken, both from Fairprice. For this recipe, the natural springtime chicken is to a greater extent than silky too juicy. The pounded ginger, garlic too shallot glue is also crucial. It browns during the deep-frying too creates a lovely fragrance. If solely the juices are used, minus the pulp, the 纸包鸡 would live on similar steamed chicken.
To attain chicken, rinse too cutting each leg into 8 pieces. Peel too rinse ginger, shallots too garlic. Cut into minor pieces. Pound finely, or blitz inwards a mini chopper. Mix thoroughly alongside all other marinade ingredients too chicken. Leave to marinate for 1 hour, or upward to 24 hours.
Just earlier wrapping, drizzle alongside sesame crude too vegetable crude too mix thoroughly. Sprinkle alongside tapioca flour too mix again.
To twine chicken, house parchment newspaper inwards a stack facing yous horizontally. Fold left ⅓ of newspaper to the right, too then correct ⅓ to the left. Turn over, too crease bottom ⅓ upward. You at nowadays convey crease lines for turning each slice of newspaper into a pocket.
Form a steal alongside parchment paper. Fill alongside 2 pieces of chicken. Do non include whatsoever excess marinade. Fold left too correct corner of overstep flap downward, forming a triangle. Tuck triangle into bottom flap every bit snugly every bit possible. Place wrapped chicken on a plate, flap side facing up. Repeat alongside remaining newspaper too chicken.
