Fermented beancurd is expert stuff. It's gotta be. Otherwise, it wouldn't bring survived war, peace, too technological upheavals for to a greater extent than than 2,000 years.

DICED CHICKEN WITH SPICY
FERMENTED TOFU (香辣腐乳鸡丁)
400 g boneless chicken leg, launder too die ii cm
Marinade
1½ tbsp white fermented beancurd's pickling liquid
⅓ tsp salt
½ tbsp sugar
1 tbsp Shaoxing wine
1½ tbsp water
Stir-fry
1 tbsp white sesame oil
1 land ginger, one-half pollex size, peel, launder too land thinly
iii cloves garlic, peel, launder too land thinly
iii bird's middle chillies, wash, trim too land diagonally iii mm thick
iii sprigs outflow onion (white part), cutting 1 cm long
thirty g white fermented beancurd, mash
1 tbsp Shaoxing wine
Finishing touch
iii sprigs outflow onion (green part), cutting 1 cm long
¼ tsp white sesame oil
1. Mix chicken amongst marinade ingredients till all liquid is absorbed. Marinate for xv minutes or longer.
2. Heat 1 tbsp white sesame crude till real hot. Add ginger too stir-fry over high rut till lightly golden. Add garlic, chillies too outflow onions (white part). Stir-fry till garlic is every bit good lightly golden. Add fermented beancurd too stir-fry till fragrant. Add chicken too stir-fry till wok is real hot. Drizzle amongst vino too stir through. Drizzle amongst 1 tbsp water. Stir through again. Add ii tbsp H2O too maintain stirring – a few minutes would produce – till chicken is but cooked (totally opaque too firm), too sauce is reduced too slightly thickened. Or exit sauce a flake watery if non eating inside 10 minutes, because it thickens every bit it sits.
3. Taste too arrange seasoning if necessary. Turn off heat. Sprinkle amongst outflow onions (green part). Stir through. Sprinkle amongst ¼ tsp sesame oil. Plate too serve immediately.
