The Stack (Pandan too Coconut Crepe) (adapted from Nonya Recipes past times Debbie Teoh)



coconut filling
1/2 grated coconut
100g palm sugar
50g sugar
100ml water
2 sprigs pandan leaves



crepes
160g plainly flour
1 teaspoon corn flour
1 egg
160ml thick kokosnoot milk
300ml water
2 tablespoons pandan juice
few drops of greenish colour


To laid upwards filling: Cook palm sugar, sugar, H2O too pandan leaves tied inward a knot until the sugars melt. Add grated fresh coconut; mix to coat thoroughly.
